Tandoor oven is used as the traditional Indian technique. With a deep clay body, it is fuelled by coal from the bottom, which spreads an even & high heat throughout the walls of the oven. Meat is placed along the side of the walls to bake. Like the nan, is slapped against the wall it self, which gives them that special texture.
