He six main categories of pure tea are all derived from this one plant, but are processed differently to create their unique characteristics:
Black Tea: Fully oxidized, resulting in a rich, robust, and often malty flavor. Examples include Assam, Darjeeling, and Ceylon.
Green Tea: Unoxidized, with the leaves heated shortly after picking to preserve their fresh, vegetal, and sometimes grassy flavor. Examples include Sencha and Dragon Well.
