Cooked with herbs, spices, onions and plenty of fried tomatoes, sag dishes with spinach

Madras is fairly hot curry, vindaloo is very hot

Bhuna is medium hot cooked in thick dry sauce and dupiaza cooked with lots of diced fried onions in a thick rich sauce

Balti pan is round bottomed wok like heavy cast iron dish with two handles. The food cooked in the balti pan are aromatic, spiced curries but not excessively spiced with chillies. served with nan
