To most people around the world, Fish & Chips is the dish they most associate with the UK, but it’s not just Brits who are crazy about Fish & Chips. Two more lighter options are Scampi & Chips and the breadcrumb or batter-covered Fishcake. A bit croquette-ish, it usually consists of filleted and chopped fish mixed with potato, egg and flour seasoned with black pepper, herbs and onions. A Salmon Fishcake can’t leap up a Scottish waterfall, but it can lie very alluringly on a bed of crisp, fresh salad.
