Or perhaps try your eggs hard-boiled with rice, moist flakes of smoked haddock, fresh parsley and curry powder? We’re talking about Kedgeree, of course, a Victorian Scottish recipe brought over from India. The Continentals create Brunch with a touch of ‘je ne sais Croissant’. The French Croque-Monsieur is a swanky Ham & Cheese Toastie (called Tost in Italy and Tosti in Holland) that oozes cheesiness (and hamminess). ‘Croque’ means bite – and a Croque-Madame is the same toastie but with a poached or fried egg on top.
