Misir Wot, Shiro Wot, Key Wot, Doro Wot – if you’re one of the many who have savoured Ethiopian food, you’ll know what’s Wot. A Wot (or Wat) is basically a hearty Ethiopian stew. It comes with many names and many ingredients but it always hits the spot. There’s Shiro Wot, a chickpea or broad bean swirl of garlic and hot spices in a rich tomato sauce. There’s Misir Wot, a spicy red lentil stew. There’s Doro Wot, a spicy chicken stew. There’s Key Wot, a beef stew. Yes, there are lots of Wots. But there are other delicious dishes, too. Like Derek Tibs, which is beef or goat fried with butter, and served inside a flaming hot ceramic dish. It’s just wonderful.
