Ragù
Whatever type of Pasta you’re after, there’s one go-to sauce that will make you want to, er...just eat. Ragù is the most famous of Neapolitan meat sauces. Made from a Soffritto (the holy trinity of onion, celery and carrot), meat and tomato sauce with guest appearances from red wine, basil and olive oil, it’s a speciality of Naples. Penne Arrabbiata is a very spicy (and Vegan-friendly) sauce made from garlic, tomatoes and dried red chilli peppers cooked in olive oil. Tagliatelle al Fungi is another favourite with fresh mushrooms like button, chestnut and oyster with garlic, wine and thyme. Tiramisu is a coffee-flavoured dessert made of ladyfingers dipped in coffee layered in a whipped mix of eggs, sugar and mascarpone cheese, flavoured with cocoa. Yum. The classic Panna Cotta is a traditional dessert made from cream, milk, sugar, vanilla and gelatin. Tartufo, which is Italian for truffle – and supposed to look like one – is a small ball of gelato (healthier ice cream) made from two flavours covered with a chocolate shell, often with frozen fruit – raspberry, strawberry or cherry – located in the centre.
