Spaghetti Carbonara
The two most commonly used Italian words in Britain are Spaghetti Bolognese (aka Spag Bol). Rich, tomato-based sauce nestling in a swirling, fork-friendly mass of pasta is the embodiment of La Dolce Vita and – although there are numerous variants of veal, beef, lamb, pork or vegetarian – it always does the Italian job. Spaghetti Vongole, a more refined classic infused with garlic, clams, white wine and chilli flakes, is a dish for lovers of the Mediterranean (or even North) Sea. Penne Arrabbiata
Ragù is the most famous of Neapolitan meat sauces. Made from a soffritto (the holy trinity of onion, celery and carrot), meat and tomato sauce with guest appearances from red wine, basil and olive oil, it’s a speciality of Naples. Penne Arrabbiata is a very spicy (though Vegan-friendly) sauce made from garlic, tomatoes and dried red chilli peppers cooked in olive oil. Tagliatelle al Fungi is another favourite with fresh mushrooms like button, chestnut and oyster with garlic, wine and thyme.
