Historians believe that people were enjoying curry as far back as 4000 years ago. The dish has certainly evolved since then. Today, the choice is wide and varied and pops up on menus in many different countries wherever appetites demand special spicy comfort food. There are North Indian curries, South Indian, East Indian and West Indian curries, Sri Lankan curries, Thai curries, Malaysian curries and even Japanese curries. The world ‘curry’ comes from the Tamil word ‘kari’ meaning a spicy sauce.

Chicken Chaat
Curry is the star of the show, but there are some great supporting acts. If Looking for a conversational starter – what better than a Chicken Chaat? Small pieces of chicken tikka cooked in a sauce of cucumber, onion and masala spices, then topped with coriander and a squeeze of fresh lemon. Yum. (A Potato Chaat is equally moreish.) Naan Bread is a must with any Indian meal, whether Peshwari (sweet with almond flakes, coconut and raisin filling), Keema (often a chef’s signature Naan, with a secret recipe of ground lamb with aromatics and Indian spices), Garlic Naan (which will ward off those family members you don’t want to kiss goodbye) or just plain ol’ Plain (leavened, oven-baked flat bread – think of it as the straight man to the comedy genius of your main course). Steamed Rice is pure and simple, Pilau Rice is more colourful and flavoursome, and Coconut Rice is positively exotic. And don’t forget the Poppadums – these large circular pieces of thin crisp flatbread are ever-so-irresistibly snappable. Two Spicy, two Plain, lots of Lime Pickle, please…

Jungle Curry
Thai curries focus on lightly prepared dishes with strong aromatic ingredients and a spicy edge. Thai Green Curry is coconut curry flavoured with fresh green chili peppers and Thai basil with chicken, prawns or fish balls. Want spicier? You want Thai Red Curry with Roast Duck, the quintessential mix of the Thai (red curry) and Chinese (red roast duck) cuisines, and often cooked with fruits like grapes and pineapple. Thai Yellow Curry is a Thai-Muslim dish made with chicken and potatoes, though other meats or prawns are often used. Massaman Curry is a thick, almost-Indian-style curry containing coconut milk with stewed beef or chicken and rare dried spices. Jungle Curry hails from forested areas of Northern Thailand (and contains no coconut milk, as they didn’t occur naturally there). Once cooked with wild boar, it is still anything but boring with chicken or pork. Another curry rising in popularity from The Land of the Rising Sun is Katsu Curry, which is breaded and fried chicken or pork on white rice doused in silky curry sauce.
