A Kabob Sultani (aka ‘for a Sultan’) is two separate skewers of red meat; one Kabob Koobideh (aka Lamb) AND one Kabob Barg (aka Beef Filet Mignon). So called, because the Sultan’s ‘Royal status’ makes him deserving of two types of meat. A Chicken Kabob Sultani is the same principle, but with a skewer of Chicken Koobideh which uses ground chicken (and) a Chicken Barg which serves a boneless fillet of lean chicken meat. Both are often served with multiple types of Rice, or with Lavash (aka Unleavened Flatbread) popular across Iran, Armenia and Turkey. This bread makes a delicious alternative to wraps or Naan, and is cooked in a traditional cylindrical clay Tandoor Oven (and delivered on a contemporary red Just Eat delivery bike).

A meaty fave of Iranian Cuisine is Ghormeh Sabzi, (aka Persian Beef Stew,) a tasty, tangy Beef & Kidney Bean Stew with spinach, spring onions, dried limes and lots of fresh herbs.
